Looks like your map isn't showing, but presumably you are taking the Grand Canyon of the Tuolumne to Pate Valley from Tuolumne, going to White Wolf and then back to Tuolumne through Ten Lakes Basin. That's a great route and I wouldn't change it unless you wanted to make it longer, but more isn't always better. May Lake is nice, but you'll be adding a day and will be seeing more people. As for why asphalt fell out of favor was due to a number of reasons. One you mentioned, perhaps inadvertently, is that asphalt deteriorates rather quickly in comparison to well set rock. balzaccom, I too was at Hyatt Lake over Labor Day weekend. Came in from Crabtree TH, to Rosasco Lake and then to Hyatt. Instead of going straight from Rosasco down to Hyatt, (we wanted to avoid the drainage as it might be brushy) we went to the east through the big granite bowl closer to Big Lake. Yes! It's wonderful up there anytime and you probably won't see very many people, potentially no one past the Laurel-Vernon-Rancheria loop, particularly later in the month. If you go a little later in September you might see the aspen's changing color in Jack Main. The section of trail from Columbia Rock to OMGP is fine. However, the short drop from the trail to OMGP has some exposure, but is really short and not much more than the point itself, though that does have a railing for safety and comfort. As for the Four Mile and Panorama Trails, I would think you shouldn't have an issue on either one, though I don't have an aversion to heights. A little over 50% is better than I expected but worse than I hoped. At first I thought it wouldn't be too hard because of all the places I did recognize, but once you try it, it is really hard to pin down locations.
